Peanut Butter Chocolate Chip Protein Balls

Makes 12 protein balls

111 calories per ball

6g protein, 6g carbs, 7g fat

I have always wanted to try a protein ball, but every recipe I found used ingredients that I am allergic to (especially oats, they seem to be in every recipe).  Plus many recipes contained added sugars that my partner cannot eat.

This weekend I developed a recipe that is fiancé tested and approved, does not contain wheat, gluten, dairy, soy or oats and only needs a few ingredients that you probably already have on hand.

These little protein powerhouses can be eaten after a workout or a run, as a guilt-free dessert or an afternoon protein pick-me-up.

3-5 dates (depending on how sweet you want them)

½ cup protein powder (dairy free)

½ cup peanut butter

1 tbsp. coconut oil

¼ cup chocolate chips (dairy free, I use Enjoy Life Chocolate Chips)

1-2 drops vanilla (optional)

2 tbsp. water

Remove pits and blend dates in a food processor with 1 tbsp coconut oil

Once blended, add all remaining ingredients - except for the chocolate chips - into the food processor, blend until mixed

Pour ingredients from processor into a large boil. Add chocolate chips. Mix until chips are fully incorporated

To make balls: use tablespoon-sized scoops of the dough and roll with hands

Place individually in a muffin tray or a cookie sheet with parchment

Cover with wrap and place in the freezer for 1 hour

Serving: 1-2 balls per day

Can be stored in the fridge and will keep for a week, if you don’t eat them all before then!
