Vegan Protein Banana Bread

Banana Bread


Pre-Heat Oven to 350 degrees

1/2 cup or 2 scoops protein powder

1 cup rice flour

1 cup mashed bananas (or about 3 bananas)

¼ cup applesauce

1 tsp baking soda

1 tsp baking powder

1 tbsp cinnamon

1/4 cup maple syrup

2 eggs (for flax eggs combine 3 tbsp water + 1 tbsp ground flax, let stand before using)

2 tbsp coconut oil


Optional Ingredients

¼ coconut sugar (optional)

Handful of walnut pieces (optional)

Top with currants, chia seeds, or banana slices (optional)


(Tip: mix wet with wet and dry with dry: Add wet to dry, mix together) 

Place mixed ingredients in a loaf pan

Cook at 350 degrees for 50 – 60 minutes or until toothpick (or spaghetti noodle) pulls clean

Let cool before serving
