Vegan Protein Pumpkin Bread

Recipe

Pre-Heat Oven to 350 degrees

¼ cup or 1 scoop protein powder

1 1/4 cup rice flour

1 cup pure canned pumpkin

¼ cup applesauce

1 tsp baking soda

1 tsp baking powder

1 tbsp cinnamon

1/2 tsp nutmeg

1/4 cup maple syrup

2 eggs (for flax eggs combine 3 tbsp water + 1 tbsp ground flax, let stand before using)

2 tbsp coconut oil

¼ coconut sugar (optional)

Place mixed ingredients in a loaf pan

Cook in the oven at 350 degrees for 45 – 55 min or until toothpick (or spaghetti noodle) pulls clean

Let cool before serving
